#BonAppétea: Dong Ding Oolong Salt & Quail Eggs

One of our fondest memories of kindergarten would be snack time and the snack that stood out above the rest would be hard boiled quail eggs. Yes, quail eggs. These small eggs were such a novelty, especially compared to the regular chicken eggs we got at home. Now that we’re all grown up and #adulting, we’ve found a way to glam up this childhood snack.

Quail eggs are given an added depth when you dip them into our oolong and sea salt dip. The oolong gives it a surprising vegetal and marine flavour, and the dip adds some crunch to the boiled eggs. This is a savoury, addictive appetiser that would is perfect for any tea party.

We tested with, and recommend Kindred Teas’ Dong Ding Oolong, but feel free to use your favourite type of tea and let us know how it worked out! We’ve also used sea salt here, but if you’ve got a favourite that you like (ahem, pink Himalayan salt), go ahead and try that in. The possibilities for customising this recipe are endless.

Here’s how you can make your own oolong salt!

What you need:
12 Quail eggs
1 tbsp of Oolong loose leaf
1 tsp of sea salt


1. Bring water to a boil

2. Add in the quail eggs and let it boil for 4 minutes for hard-boiled eggs. If you prefer your yolks to be a little runny, you can reduce the boiling time to 2.5 to 3 minutes.

4. To make the tea salt, add in the tea and salt in a mortar and pestle. Grind till well integrated.

#teapasar tip: To save even more time, you can get cooked quail eggs from the supermarket. The taste won’t be as good as fresh eggs, but it does mean that you only have to prepare the oolong and sea salt dip. If you’re using fresh eggs, be sure to eat them immediately.
