Bon Appétea: Herbal Butter Thins


Taking the ever-popular Recover blend from Infusion-de-vie, team teapasar concocted not one but two yummy recipes to kick off Singapore’s 55th National Day celebrations.

First up, we have our Herbal Butter Thins which offers a harmonious medley of flavours – sweet, buttery and with a distinctly floral aftertaste of chrysanthemum. The texture of these cookies is similar to a cross between sugar cookie & shortbread, but thinner and satisfyingly crisp in every bite. Not forgetting to add a tinge of celebratory cheer, we decorated the cookies with zesty lemon icing coloured red and white that cuts through the sweetness.




  • 1 Infusion-de-vie Recover teabag
  • 2 1/4 cup plain flour
  • 225g unsalted butter, at room temperature
  • 1 cup caster sugar
  • 2 tsp vanilla essence


  • 2 cup icing sugar
  • 4 tbsp milk
  • 1 tsp lemon juice
  • 1/2 tsp red colouring



  1. Remove contents from teabag and pulse with a food processor into powder. Alternatively, grind into powder.
  2. Combine and sift tea powder with flour. Set aside.
  3. Cream butter, sugar and vanilla essence together.
  4. Add flour mixture and mix well. Gently knead into dough.
  5. Flatten the dough and wrap with cling film. Refrigerate for 30 minutes.
  6. Gently roll out dough and place onto the baking tray. Slice the dough into fingers and space them apart. Refrigerate for another 30 minutes.
  7. Meanwhile, preheat oven to 190°C.
  8. Remove cookies from the fridge and bake for 15 minutes till lightly golden and edges are just brown.
  9. Let cool on the tray for 5 minutes before transferring to wire rack. Cool completely before icing the cookies.
  10. For the icing, stir milk and lemon juice into icing sugar. Spoon out 1/3 icing and set aside. To remaining 2/3 icing, add red colouring and mix well. Add sugar if icing is too runny or milk if too thick.
  11. Transfer icing into a piping bag or a squeeze bottle to ice cookies. Gently draw crescent and stars with white icing to form the symbols of the Singapore flag. With red icing, fill remaining space to cover half of each cookie.
  12. Let icing set completely.

Stored in an air-tight container, these crispy, comforting and dangerously addictive Herbal Butter Thins can last up to a week — although we are pretty sure it would be finished before then.
