“Sayama single origin tea Yumewakaba” was introduced on the blog of Singaporean novelist, Eustacia!

This is a single-origin tea “Yume-Wakaba”. This year’s “Yume Wakaba” is a delicious tea with a strong taste and a lot of sweetness. The tea has been wilted in a wilting machine for 6 hours, which gives it its original floral aroma stronger. The tea is steamed for 120 seconds, which gives its tea colour a very deep green.

No additives such as sugar, flavors, or seasonings are used.
The astringency and bitterness of Japanese tea comes from a component called catechin.
Catechins are a type of polyphenol with strong antioxidant and antibacterial properties.

Origin:
Iruma City, Saitama

Brewing Directions:
Loose tea: 150 ml of hot water temperature at 70-80C, 4g of tea leaves, brew 90 sec.
Tea Bag: 200 ml of hot water temperature at 90C, brew 60 sec.

About “Shimizu-en” and “Yume-wakaba”.
Shimizu-en is an old tea farm, starting in the 19th century. Shimizu-en sticks to the good old method of tea production, that is, picking tea leaves by hand. During the harvest season, they employ more than 20 people to pick leaves. After withering tea leaves for a short period, “Yumewakaba” has strong sweetness and aroma.

While most Japanese teas are made by blending tea leaves bought from all over Japan, in Sayama each farmer is responsible for the entire process from cultivation to production. Our teas are single origin teas which are not blended with other varieties grown on the same farm. This means that you can perfect trace the tea, where it was grown, when it was picked, by whom and how it was produced. Each variety has its own colour, aroma and taste.
